Ingredients:
For the Grilled Salmon:
4 salmon fillets (about 6 ounces each), skin-on or skinless
1/4 cup fresh lemon juice
2 cloves garlic, minced
2 tablespoons fresh dill, chopped
Salt and pepper to taste
Olive oil for brushing
For the Lemon Dill Sauce:
1/2 cup plain Greek yogurt
2 tablespoons fresh lemon juice
1 tablespoon fresh dill, chopped
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions:
In a shallow dish, combine the fresh lemon juice, minced garlic, chopped dill, salt, and pepper to create the marinade for the salmon fillets.
Place the salmon fillets in the marinade, turning to coat them evenly. Cover the dish and refrigerate for at least 30 minutes to allow the flavors to infuse.
While the salmon is marinating, preheat your grill to medium-high heat. Brush the grill grates lightly with olive oil to prevent sticking.
In a small bowl, prepare the lemon dill sauce by combining the Greek yogurt, fresh lemon juice, chopped dill, Dijon mustard, salt, and pepper. Stir until well combined, then cover and refrigerate until ready to serve.
Remove the marinated salmon fillets from the refrigerator and let them come to room temperature for a few minutes.
