Teriyaki Chicken Stir-Fry

Indulge in this flavorful Teriyaki Chicken Stir-Fry for a meal that's as nourishing as it is delicious. Packed with lean protein from tender chicken strips and an array of vibrant vegetables, this dish is a feast for the senses. The homemade teriyaki sauce, crafted with wholesome ingredients like soy sauce, honey, and sesame oil, adds a delightful sweetness with a hint of umami. With its balanced blend of protein, fiber, and essential nutrients, this stir-fry is a perfect choice for supporting a healthy lifestyle.



Ingredients:


  • 2 boneless, skinless chicken breasts, sliced into thin strips

  • 2 tablespoons soy sauce

  • 1 tablespoon cornstarch

  • 1 tablespoon vegetable oil

  • 2 cloves garlic, minced

  • 1 teaspoon ginger, minced

  • 1 small broccoli crown, cut into florets

  • 1 bell pepper (any color), thinly sliced

  • 1 cup snap peas, trimmed

  • Cooked brown rice or noodles, for serving

  • Optional garnishes: sesame seeds, sliced green onions


For the Teriyaki Sauce:


  • 1/4 cup soy sauce

  • 2 tablespoons water

  • 2 tablespoons honey or maple syrup

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1 teaspoon cornstarch

Instructions:


  1. In a small bowl, whisk together 2 tablespoons of soy sauce and 1 tablespoon of cornstarch until smooth. Add the sliced chicken breast strips to the bowl and toss to coat. Let marinate for about 10-15 minutes.

  2. In another small bowl, prepare the teriyaki sauce by combining soy sauce, water, honey or maple syrup, rice vinegar, sesame oil, and cornstarch. Whisk until well combined and set aside.

  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger, and sauté for about 30 seconds, or until fragrant.

  4. Add the marinated chicken strips to the skillet, spreading them out into a single layer. Cook for 2-3 minutes per side, or until browned and cooked through. Remove the chicken from the skillet and set aside.

  5. In the same skillet, add the broccoli florets, sliced bell pepper, and snap peas. Cook, stirring frequently, for about 3-4 minutes, or until the vegetables are crisp-tender.

  6. Return the cooked chicken to the skillet with the vegetables. Pour the teriyaki sauce over the chicken and vegetables, stirring to coat everything evenly. Cook for an additional 1-2 minutes, or until the sauce has thickened slightly.

  7. Serve the chicken stir-fry over cooked brown rice or noodles. Garnish with sesame seeds and sliced green onions, if desired.
