Red Lentil Waffles

INGREDIENTS:


  • ½ cup red lentils

  • 1 cup soy milk

  • 1 Medjool date

  • ½ tsp cinnamon

  • ⅛ tsp baking powder

  • Salt a pinch

INGREDIENTS:


  1. First, soak your lentils in your soy milk and your date for at least 3 hours or overnight.

  2. Add in the rest of your ingredients and blend until smooth!

  3. Grease your waffle maker with ½ tsp olive oil and cook your waffles in your waffle maker. Divide your batter into 2 waffles, or make fewer mini waffles! Make sure to grease your waffle maker, or the batter will likely stick.

  4. Add on your favorite toppings and enjoy!
