This vibrant Mediterranean Chickpea Salad is a nutritional powerhouse packed with protein, fiber, vitamins, and minerals. Ingredients:
1 can (15 ounces) chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, thinly sliced
1/4 cup crumbled feta cheese
Fresh parsley, chopped
Fresh mint leaves, chopped (optional)
For the dressing:
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey or maple syrup (optional)
Salt and pepper to taste
Instructions:
In a large mixing bowl, combine the chickpeas, cherry tomatoes, diced cucumber, sliced red onion, and crumbled feta cheese.
In a small bowl or jar, whisk together the extra virgin olive oil, fresh lemon juice, honey or maple syrup (if using), salt, and pepper to make the dressing.
Pour the dressing over the salad ingredients in the large bowl. Toss gently to coat everything evenly.
Sprinkle chopped parsley and mint leaves (if using) over the salad and toss again lightly to distribute.
Taste the salad and adjust the seasoning if needed with additional salt, pepper, or lemon juice.
