Mint Greek Frozen Yogurt

INGREDIENTS:


  • 3 cups plain Greek low-fat (2%) yogurt

  • 1 cup sugar

  • ¼ cup freshly squeezed lemon juice

  • 2 teaspoon vanilla

  • ⅛ teaspoon salt

  • 2 tablespoons snipped fresh mint

INSTRUCTIONS:


  1. Combine the yogurt, sugar, lemon juice, vanilla, and salt in a medium bowl. Whisk until smooth.

  2. Freeze the yogurt mixture in a 1 ½ to 2-quart ice cream maker according to the manufacturer's directions. Stir in mint. Transfer to an airtight container and freeze for 2 to 4 hours before serving. Let stand at room temperature for 5 to 15 minutes before serving.
